When did you know you needed a career change?
I had always been an ambitious person, but I reached a stage where I was no longer excited nor happy about my career progression options. That’s when I knew it was time to move on and do something completely new!
What was the most challenging part of your the transition?
Uncertainty and the ups and downs of being an entrepreneur.
What was life like studying at Le Cordon Bleu?
Hands down, one of the best years of my life! I met Michel Roux and Atul Kochar.
What’s the philosophy behind maple&FITZ?
Bringing happiness to the local community!
Any tips on what we should eat/drink pre and post workout?
Pre-workout, a spoon of nut butter. It’s delicious, quick and just the right amount of food so I’m neither hungry or at risk of cramping up. Post-workout, two eggs boiled or poached. Again, delicious, simple and a good source of protein.
Best juice for tackling a hangover?
We’ve designed a juice just for this! It’s our raw cold-pressed juice, ‘After the Disco‘ which has coconut water, pineapple, lemon and romaine lettuce. (coconut) – great hydration drink, natural isotonic drink full of electrolytes; (pineapple) – bromelain for anti- inflammatory/ pain; (lemon) – limonene for liver detox.
What are your recommended healthy snacks…
– Green juice (no fruit, cold-pressed lasts up to 3 days)
– Toasted spiced nuts and seeds (regularaly change up the spices for more variety)
– Nut butters or hummous with crudité (pre-cut and pre-portion at the start of your week so you can easily grab-and-go!)
– Poached or soft boiled egg (perfect post-workout)
– Homemade granola (super low natural sugar, because natural sugar is still sugar!)
How do you stay fit and healthy with exercise?
I try to get a 6am workout in the mornings 2-3x a week, jog to and from meetings when possible (love that I no longer have to wear business casual!) and yoga on the weekends.
What helps you to unwind and relax after a day in the kitchen…
I find being in the kitchen energising, it’s everything else about running a business that’s challenging. When I get home, I love to whip up a quick home cooked meal with a glass of wine in my hand.
What’s your go-to drink?
A natural Bloody Mary. Natural tomato juice without the salt, sugar and preservatives, some fresh chilli for a yummy kick and your metabolism, a celery stick for snacking and fibre and finally – a shot of good quality vodka.

Jog in the crisp morning air in Little Venice, brunch with my nephews and a dinner party at my flat.
How can we protect our immune system in the winter months?
It’s all about gut health (70% of our immune system is in our gut). Eating superfoods to boost nutrients e.g. dark leafy greens, oily fish, turmeric, green tea, exercise and REST!
What can we expect from maple&FITZ in the future?
I am working on opening more Maple&… stores, with a second site opening early next year, writing a cookbook and continuing with my regular teaching at CNM (College of Naturopathic Medicine)
