Vegan Linzer Heart Cookies

(Otherwise known as love-heart jammy dodgers!)

Ingredients

75g ground almonds
90g oat flour
2 tbsp melted Coconut oil
1 tsp vanilla extract
2 tbsp milk of choice
3 tbsp maple syrup
40g coconut sugar
1/2 tsp sea salt
Jam of choice. I made homemade chia seed Strawberry jam but I also like Dalfour unsweetened jams

Method

Preheat the oven to 180c
Mix all of the dry ingredients well before adding the coconut oil, maple syrup and milk. Mix well into a dough.
Refrigerate the dough for 1 hour.
Cover a flat surface with some flour and using a rolling pin, roll out the dough until 1 cm thick. Use a heart shaped cookie cutter to make the cookies shapes. To make the outer edges of the heart, use your hands and break some dough to roll into a thin tube you can place around the edges.
Finally fill the hearts with your jam of choice or you could even chocolate.
Pop on the oven and bake for 12 minutes. Take out and let cool fully before enjoying!
